why are the other 4,654,866 wangs called wang...but the yankee's wang is called wong ?

It's pronounced Wong because that's the way it's meant. I think there is no Wang (said that way) in the Chinese language.

There are Wangs, Wayne Wang is pronounced Wang, he's a Chinese director.

Nevertheless, Chien-Meng Wang is pronunched wong.

I think you're reading too much into the man's name.
